Simple Kaiser Rolls

Summer is just about here! Break out those grills and start making your favorite cookout dishes. One of my favorites are burgers on kaiser rolls. These rolls are soft and fluffy, and are usually topped with sesame or poppy seeds for that extra crunch. Enjoy with deli meats for a beach sandwich or even just plain and slathered in butter. I hope you enjoy! Let's get baking!





Ingredients:

  • 3 cups (360 grams) all purpose einkorn flour (see notes for using regular all purpose)

  • 136 grams (a little over 1/2 cup) water, warm

  • 1 and 1/2 tsp active dry yeast

  • 1 and 1/2 tsp sea salt

  • 1 tsp cane sugar

  • 1 egg

  • 2 tbsp grass-fed butter, softened

  • For topping:

  • 1 tbsp raw milk

  • Sesame or poppy seeds

Notes: If using regular all purpose flour, simply increase the amount of water by 20%. Or 175 grams water.


Directions:

  1. In a large bowl, mix all of the ingredients together. Use a stiff spatula and stir until smooth.

  2. Cover the bowl with plastic wrap and allow to rise for 1 hour.

  3. Turn the dough out onto a lightly floured work surface. Divide the dough into 6 equal sections. roll each section into a long "snake". Create a traditional kaiser knot. (Check out the video over on my instagram account or simply google search how to create the knot.)

  4. Place the rolls onto parchment lined baking sheets. Cover the rolls with plastic wrap and allow to rise for 1 hour. Close to the end of the hour, preheat the oven to 425 F.

  5. Brush the tops of the rolls with the raw milk and sprinkle on the seeds. Bake the rolls for 15-18 min. or until golden. Enjoy!
