Autumn Einkorn Pancakes

Let's start with the basics. Einkorn pancakes. Einkorn is an ancient heirloom wheat. It is the only wheat that has never been hybridized. This means that is was not genetically modified to feed more people, it exists in its natural state. It has a low gluten index and is deliciously buttery and decadent. The perfect addition to your cottage kitchen pantry!
Prep: 10 min.
Bake: 20 min.
Yield: 4 six inch pancakes
Ingredients:
1 and 1/4 cup all purpose einkorn flour
2 tsp baking powder
1 egg
1 cup raw milk
1 tbsp melted butter
1 chopped apple
1 tbsp lemon juice
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp maple syrup
Directions:
Combine the flour and baking powder in a medium sized bowl.
Combine the egg, milk and butter in a small bowl. Whisk.
Add the egg mixture to the flour bowl. Stir to combine.
Cook the pancakes in a hot buttered cast iron skillet.
While the pancakes are cooking, prepare the apple topping. Add chopped apple, lemon juice, spices and maple syrup to a saucepan over medium heat. Stir frequently until apples are warmed and tender.
Top your einkorn pancakes with the apple mixture. Enjoy!
