Cozy Winter Cinnamon Rolls

It's been pretty cold here in Massachusetts lately and I've been craving some good old fashioned cinnamon rolls. With the snow falling outside and the wood stove fire burning inside, there is no better feeling than curling up with a hot cup of coffee and a warm cinnamon roll. These cinnamon rolls are definitely a treat, but are much lower in sugar than your standard roll. They are made with einkorn flour, raw milk, butter and sweetened with coconut sugar. I hope you enjoy, let's get baking!

Ingredients:
Dough:
3/4 cup raw milk
2 tsp active dry yeast
4 tbsp melted butter
2 eggs
2 tbsp maple syrup
1/2 tsp sea salt
4 cups all purpose einkorn flour
Filling:
2/3 cup coconut sugar
4 tbsp melted butter
1 tbsp all purpose einkorn flour
1 tbsp cinnamon
Optional Glaze:
3/4 cup powdered sugar
1 tbsp raw milk
Directions:
Pour the raw milk into a small bowl. Add the yeast and whisk until combined. Let stand 5 minutes.
Whisk in the melted butter, maple syrup and eggs into the milk mixture. In a separate bowl, combine the flour and salt. Slowly pour the milk mixture into the flour mixture and stir with a stiff spatula. The dough will be very hard to stir, so use your hands and gently form into a ball. Cover the bowl with a towel and let rest for one hour.
Flour a work surface and turn the dough out onto the surface. Use a rolling pin to roll the dough ball into a large rectangle, about 12" x 16".
In a small bowl, make the filling. Combine the butter, coconut sugar, flour and cinnamon and stir until combined. Spread this mixture evenly over the dough rectangle. Use a soft spatula or the back of a spoon to do so.
Roll the dough into a log. Cut into 12 even pieces. Use butter or oil to grease a cast iron skillet. Place the pieces into the skillet, it is ok if they touch. You may need to use 2 skillets if they are smaller sized. Cover with a towel and let rest for 30 min.
Preheat the oven to 400 F. Bake for 20 min. or until golden around the edges.
Make the optional glaze by combining the raw milk and powdered sugar. Pour over cooled cinnamon rolls. Enjoy!
