Dairy Free Drop Biscuits

If you are lactose intolerant or in an area where you do not have access to raw milk, I recommend only one replacement...coconut. It is by far the best alternative to raw dairy from both a nutritional and baking standpoint. It is full of good saturated fats, which are essential to our diet. However, there are only a few brands of coconut milk that do not contain any additives, gums or preservatives. I use the Native Forest 'no guar' coconut milk from Whole Foods. This is a wonderful product in that the only ingredients are organic coconut and water. Many other milk replacements exist, but I do not recommend those. I will do a future post on why I avoid those products in my cottage kitchen. Please enjoy these super quick and easy dairy free drop biscuits! I will try to incorporate dairy free recipes regularly.

Prep: 10 min.
Bake: 15 min.
Yield: 8 large biscuits
Ingredients:
2 and 1/2 cups all purpose einkorn flour
2 tbsp baking powder
1 tsp salt
1/2 cup coconut oil, room temp
1 cup coconut milk
1 tsp apple cider vinegar
Directions:
Preheat oven to 425 F.
Whisk the flour, baking powder and salt in a medium sized bowl.
Add coconut oil to flour mixture and combine with a pastry cutter.
Add milk and apple cider vinegar and stir with a wooden spoon or spatula.
Drop biscuits onto a parchment or silicone lined baking sheet.**
Bake 15-20 min.
** I rolled my dough into a ball and rolled once with a rolling pin for these photos. Feel free to prepare as traditional cut out biscuits, or just drop them onto the sheet. No one minds ugly biscuits!
