Farm Fresh Eggnog

This is the MOST delicious eggnog I've ever had. It is made from the eggs from our backyard chickens, raw milk, heavy cream, nutmeg, salt and sweetened only with maple syrup. This has become a new tradition in my house and I hope it becomes one in yours too!





Yield: 2 servings

Prep: 10 min.

Cook: 15 min.


Ingredients:

  • 3 large egg yolks

  • 1/4 cup maple syrup

  • 1/2 cup heavy cream

  • 1 cup raw milk

  • 1/4 tsp nutmeg

  • dash of salt

  • 1/2 tsp vanilla extract

  • cinnamon stick for topping

Directions:

  1. Whisk the egg yolks and maple syrup together in a small bowl until smooth.

  2. In a medium sized saucepan over medium heat, mix the cream, milk, nutmeg and salt. Stir often until mixture reaches a low simmer.

  3. Add one spoonful at a time of the milk mixture to the eggs, whisking constantly to temper the eggs. Once half the milk mixture has been added to the eggs, pour the egg mixture into the remaining milk saucepan. Place the saucepan back on the stove over low heat, whisking constantly for a few minutes until thickened and reaches 160 F.

  4. Remove from the heat and add the vanilla. Refrigerate until cooled and thick. Serve with a cinnamon stick and a dash of nutmeg! Enjoy!
