Healthy Date Muffins

These muffins are perfect for the remaining winter season. They will not only warm you on a cold snowy day, they will nourish your body with real whole food ingredients and no added sugar. This last week we have been extremely sick and the only saving grace has been these delicious muffins. They are made with sprouted spelt flour, grass-fed butter, maple syrup, fresh eggs, dates and many more nutritious ingredients. I hope you enjoy! Stay healthy!

Ingredients:
1 and 3/4 cups sprouted spelt flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
1 and 1/2 tsp cinnamon
1/4 cup maple syrup
1/2 cup melted butter
1/2 cup yogurt (or applesauce)
2 eggs
1 and 1/2 tsp vanilla extract
1/2 cup chopped dates
Directions:
Preheat the oven to 350 F.
In a large bowl, whisk together the eggs, maple syrup, melted butter, yogurt and vanilla until combined.
Add in the flour, baking soda, baking powder, salt and cinnamon. Stir to combine. Fold in the chopped dates. (The batter will be quite thick.)
Spoon the batter into an oiled/buttered muffin tin.
Bake 13-15 min. Enjoy!
