Homemade Cranberry Whipped Cream

We're only a few days away from Christmas and here in Massachusetts cranberries are abundant. I love finding creative ways to incorporate cranberries into my holiday treats. One fun way is this delicious whipped cream. It's a pink treat without the peppermint! And I don't know about you, but I get a little tired of peppermint around this time of year. Ingredients:

  • 1 cup fresh cranberries

  • 1 cup heavy cream

  • 3 tbsp powdered sugar (optional)

  • 1 tsp vanilla extract


Directions:

  1. Add your cranberries to a small saucepan. Stir constantly over medium heat until cranberries pop and liquid evaporates.

  2. Add the cranberries to a blender and blend until smooth. Pour into a medium sized bowl.

  3. Next add the heavy cream, powdered sugar and vanilla to the bowl. Using a hand mixer, mix until thick and creamy with soft peaks.

  4. Enjoy over hot chocolate or homemade baked goods!
