Kefir Sourdough Starter

Are you looking to bake sourdough, but aren't ready to invest in maintaining an active starter? Try this incredibly easy kefir sourdough starter! You make it and only have to use it once! This time I decided to make kefir sourdough pancakes. They are deliciously light and fluffy. Made with einkorn flour, raw milk, butter and other whole food ingredients they make a healthy breakfast. Below you'll find the recipes for both the kefir starter and the pancakes. I hope you enjoy. Let's get baking!




Kefir Starter-


Ingredients:

  • 1 cup kefir

  • 1 cup all purpose einkorn flour


Directions:

  1. Mix the kefir and flour in a glass bowl or jar. Cover tightly with a lid. Set aside on the counter for 48 hours to ferment. Use as needed in a variety of baked goods.


Kefir Sourdough Pancakes-


Yield: Six 6 inch pancakes

Prep: 15 min.

Bake: 30 min.


Ingredients:

  • 1 cup all purpose einkorn flour

  • 1/2 tsp sea salt

  • 1 tsp baking soda

  • 2 tsp baking powder

  • 1 cup kefir starter

  • 3 tbsp melted butter

  • 3/4 cup raw milk

  • 2 eggs

Directions:

  1. Whisk the flour, salt, baking soda and baking powder in a large bowl until combined.

  2. Add the starter, butter, milk and eggs to the flour bowl. Stir to combine. Add in any optional mix ins (chocolate chips, fruit, etc.)

  3. Butter a cast iron skillet and turn the stove onto medium heat. Make sure the skillet is nice and hot before adding the pancakes. Pour batter into the skillet and flip when golden. Enjoy!
