Natural Mint Chip Brownies

Have you wanted to bake some mint chocolate chip brownies, but don't want to use food coloring? Find out how to bake these brownies with a naturally green buttercream frosting! It's so easy! And a much healthier option. Food coloring has been linked to several health effects such as ADHD in children, depression, allergies, skin issues and more. Take health concerns off the table and dye your frosting naturally...with spinach.

Yield: 9 large brownies
Prep: 20 min.
Bake: 30 min.
Brownie Ingredients:
1 and 1/4 cup all purpose einkorn flour (or 1 cup regular all purpose)
1 cup melted butter
1 cup white cane sugar (less is always an option, I used a 1/2 cup)
1 cup light brown sugar (again less is doable, I used a 1/2 cup)
1 cup cocoa powder
4 eggs, room temperature
1 tsp sea salt
1 cup chocolate chips
1/2 tsp peppermint extract
Buttercream Frosting:
1/2 cup butter, softened
1 and 3/4 cup powdered sugar
1-2 tbsp raw milk
1/4 tsp peppermint extract
3 tbsp finely chopped spinach
Directions:
Preheat the oven to 350 F. Oil a 9x9 baking dish. (Other sizes work as well, just makes them a different height)
In a large bowl, whisk the melted butter, sugars, cocoa, eggs, salt and peppermint. Whisk until well combined.
Add the flour and stir with a stiff spatula until incorporated. Let the mixture sit for 10 min. for the einkorn flour to absorb the liquid.
Pour the batter into your prepared baking dish.
Bake for 30-35 min. or until a toothpick inserted in the middle comes out clean.
While the brownies are baking, prepare the frosting. In a stand mixer, mix the softened butter until creamy. Then add in the powdered sugar and mix until combined. Slowly add the raw milk until desired spreadable consistency is reached. Finally add the peppermint extract and spinach and mix until green and smooth.
Allow the brownies to cool completely, then spread the frosting. Top with chocolate chips and place in the fridge to harden the frosting. Enjoy!
