Sourdough Bagels

Well look no further...you have found THE sourdough bagel recipe. I could eat one of these bagels every day and never grow tired of them. They are made with einkorn flour and simple ingredients. So grab your apron and let's get baking!



Yield: 8 bagels

Prep: 10-15 hours

Bake: 20-25 min.


Ingredients:

  • 1 cup filtered water

  • 1/2 cup active sourdough starter

  • 2 tbsp maple syrup

  • 1 and 1/2 tsp sea salt

  • 3 and 1/2 cups all purpose einkorn flour

  • 1 tbsp baking soda (for boil bath)

  • 1 tbsp cane sugar (for boil bath)


Directions:

  1. In a large bowl, combine the starter, water, maple syrup, salt and flour (one cup at a time). Mix until dough comes together, it will be difficult to incorporate so use your hands to mix as needed.

  2. Cover with plastic wrap and let sit out overnight (at least 8 hours).

  3. Turn the dough out onto a lightly floured work surface and divide into 8 equal sections. Roll each into a ball. Flatten lightly with your hand and then punch a hole in the center.

  4. Place each bagel onto a parchment lined baking sheet. Cover with plastic wrap and let sit 2-3 hours.

  5. Preheat the oven to 425 F.

  6. Bring a large pot of water to a boil. Add the baking soda and cane sugar.

  7. Use a slotted spoon to lower each bagel into the water, boil for one minute on each side (flip bagel with the slotted spoon).

  8. Remove from the water and place onto the parchment lined baking sheet. Sprinkle with seasoning or toppings if desired. Bake 20-25 minutes or until golden. Enjoy!
