Sourdough Scones (Banana Chocolate Chip)

These scones are absolutely amazing! Plus they make great use of your sourdough discard. With a hint of banana and loads of chocolate chunks they will be sure to satisfy your sweet tooth. However, they are actually pretty low in sugar, with only 1/4 cup of coconut sugar plus the chocolate. They pair perfectly with your favorite cup of coffee or tea...or maybe even a tall glass of raw milk! Let's get baking!





Ingredients:

  • 2 cups all purpose einkorn flour

  • 1/4 cup coconut sugar

  • 1/2 tsp sea salt

  • 2 tsp baking powder

  • 1/2 cup frozen butter

  • 1/2 cup sourdough starter

  • 1/4 cup raw milk

  • 1 egg

  • 1 tsp vanilla

  • 1 banana, mashed

  • 1 cup chocolate chunks


Directions:

  1. In a large bowl, combine the flour, sugar, baking powder and salt. Use a cheese grater to grate the frozen butter into the mixture. Stir the flour mixture and butter, then use a pastry cutter to cut the butter into the flour until the mixture resembles fine crumbs.

  2. In a small bowl, whisk the starter, milk, egg, vanilla and banana until smooth and creamy. Pour the wet ingredients into the flour mixture. Stir with a stiff spatula to combine, then add in the chocolate chunks.

  3. Turn the dough onto a lightly floured work surface and form a smooth ball. Flatten the ball lightly with your hand and cut the dough into 8 wedges. Place each wedge a few inches apart on a parchment lined baking sheet. Chill the wedges for 30 min.

  4. Preheat the oven to 400 F. Brush the tops of the dough with extra raw milk if desired. Bake for 20-25 min. until golden. Serve warm and enjoy!
