Valentine's Day Scones

These heart shaped scones are the perfect healthy treat to share with your Valentine. Made with sprouted spelt flour (one of my favorite ancient grains), they are easy on your digestive system. However, you can easily swap this out for organic all purpose flour, if you don't have any sprouted spelt. These scones are also dairy free, as part of my dairy free series for those who don't have access to raw milk.


As mentioned in previous posts, if you don't have access to raw dairy, the only replacement that meets the Weston Price standards is coconut milk. For these scones I used the Native Forest 'no guar' coconut milk. If you're looking to make scones with raw dairy, feel free to check out my Sourdough Discard Scones in a previous post! Ingredients:

  • 2 cups sprouted spelt flour

  • 1/3 cup coconut sugar

  • 1 tbsp baking powder

  • 1/2 tsp sea salt

  • 1/4 cup coconut oil, solid

  • 3/4 cup coconut milk

  • 1 tsp vanilla extract

  • 1 cup cranberries or craisins

Directions:

  1. Preheat the oven to 400 F.

  2. In a large bowl, whisk the flour, sugar, baking powder and salt. Add the coconut oil into the flour mixture and cut with a pastry cutter until the mixture becomes crumbly.

  3. Use a wooden spoon to stir in the vanilla extract and coconut milk. Once the dough is formed, you can stir in the cranberries.

  4. Flour a work surface and turn out the dough. Use a rolling pin to spread out into a 1" rectangle. Use a heart shaped (or any shaped) cookie cutter to cut out the scones.

  5. Optional: brush a bit of coconut milk over the tops of the scones and sprinkle some sugar.

  6. Place scones onto a parchment lined baking sheet. Bake for 15-20 min. or until golden. Enjoy!
